HEALTHY BURRITOS

Amazing tastey and filling dinner idea- healthy eating doesn’t have to be boring!

Ingredients


120g 5% Lean Beef Mince OR 150g Diced Chicken Breast

1x wholemeal tortilla 

30g avocado/guacamole

1/4 packet (65g) Uncle Ben’s Golden Veg Rice

Fajita seasoning

1/2 onion (diced)

1/2 red pepper (chopped)

20g mozzarella cheese 

Method


  1. Dice the onions and put them in a frying pan with some Fry Light or 1kcal spray. Cook until slightly browned. Then add in the meat and seasoning. Stir thoroughly.
  2. Once the meat is cooked through, mix in the peppers and rice and cook until soft. You can add in 1 tbsp of reduced sugar ketchup for flavour (optional). 
  3. Simmer mix with 50ml water for 5-10 mins.
  4. Microwave the tortilla for 30s until warm. Spread the guacamole or avocado onto the tortilla and season with salt + pepper. Top this with 20g mozzarella and the cooked meat mix.
  5. Fold up and enjoy!
