Healthy Brownie Cupcakes

Serves 12


Perfect as a snack or pudding if you are craving something sweet!


125g protein powder
1 tsp baking powder
1 tbsp cocoa powder

1 medium banana
30g peanut butter
100ml egg white
Splash of milk

Your choice of chocolate, the first time I used a mix of 20g peanut butter cups and 20g salted caramel dark chocolate, this time I just used 30g dark chocolate chips. I would use some easter chocolate if you have some to spare! The nicer the chocolate you use, the nicer they taste!


(Can be done either in muffin cases or in one big baking tray. I have tried both and personally preferred the big baking tray version, as it ended up less dry and more tasty)

  1. Mix the dry ingredients together and then blend the wet ingredients together ideally with a hand blender.
  2. Then slowly mix the wet ingredients into the dry ingredients and add the chocolate.

I baked mine for between 5-10 minutes (5 for muffins, 10 for the tray bake) at 150 degrees. My recommendation is to undercook it rather than overcook, as it goes a bit dry if its overcooked!
