Healthy Paella

Serves 2

HEALTHY PAELLA

A delicious savoury dinner option. Spice it up as you like! 

Ingredients

300g chicken breast fillet

1/2 can kidney beans

1 pack Uncle Ben’s golden vegetable rice

1 onion

50g red bell pepper

1tbsp reduced sugar ketchup

Seasonings: 

2 tsp paprika

1 tsp chilli powder

2 tsp cumin

1 tsp garlic powder

1/2 tsp cayenne pepper 

Sprinkle of salt and pepper

 

Method:

  1. Fry the onion until it turns soft.
  2. When the onion is soft, add the chicken. As the chicken is cooking add the spices and stir until mixed through. 
  3. When the chicken is cooked, add in the peppers and kidney beans. Stir through and leave for 2-3 minutes.
  4. Microwave rice and add to mixture with the ketchup. Stir thoroughly.
  5. Leave paella for 2-3 minutes like that. Taste and add flavourings accordingly.
  6. Serve and finish with a tablespoon of guacamole on top. Now, enjoy!
